Breakfast hash

Ingredients
- 3 small yellow potatoes
- 1 medium sweet potato
- 1 medium yellow onion
- 3 cloves garlic
- 1/2 jalapeno
- 4 slices bacon
- 5 breakfast sausages
- 2/3 cup frozen corn
- 2/3 cup bell pepper
- 1tsp onion powder
- 2tsp smoked paprika
- 1 cup water
- 2/3 cup shredded cheese
Directions
- Wash and cube potatoes, dice onion, mince garlic and jalapeño, dice bell pepper, and cut sausages into 1/2" pieces.
- Boil potatoes in salted water until tender but not fully cooked; strain and set aside.
- Cook bacon in a large pan; remove and chop, leaving grease in the pan.
- Over medium-high heat, cook onion and sausage for 7 minutes.
- Add corn, bell pepper, and garlic; sauté 5 minutes. Stir in potatoes and chopped bacon.
- Season with onion powder, smoked paprika, and water; simmer 5-10 minutes until thickened.
- Top with cheese, cover to melt, and serve with a fried egg and more bacon.
