Corn pasta

Ingredients
- 350g pasta
- 1/2 cup pasta water
- 2tbsp butter
- 1/2 large onion
- 2 cloves garlic
- 2 cups corn
- 1tsp dijon
- 1tsp smoked paprika
- 2tsp onion powder
- 2tbsp mayonaise (Note 1)
- 2 1/2 cups chicken broth
- 100g aged cheddar
- 3/4 cup parmesan
- Chilli oil & green onion
Directions
- Boil pasta according to package, reserve pasta water.
- Prep: thinly slice or dice onion, mince garlic. In a large pan over medium heat, melt butter & add onion.
- Add garlic, cook 1 min then add in corn & cook 5 min. Add in 1 cup of broth, dijon, paprika, onion powder, and mayo; mix until combined.
- Add corn mixture to a blender with 1/2 cup of broth, blend until smooth; return mixture to the pan.
- Mix in pasta water, add remaining cup of broth, bring to a simmer.
- Add cheddar & parm, mix until emulsified; add pasta & top with green onion and chilli oil!
Notes
- This recipe was inspired by Frankie Gaw, he said trust me about the mayo so I just have to echo that to you. When you think about it, mayo is really just oil and eggs - it makes sense!
